MEAT PIE in PHYLLO PASTRY
How to Make Phyllo Dough Meat Pie (Suniyet Ruqaq)
1 pack phyllo dough (1 pound)
1 stick butter, melted
1 cup oil
1 pound ground beef
2 onions, finely chopped
1/4 cup parsley, finely chopped (optional)
1/2 teaspoon grated nutmeg
1 tablespoon allspice
1 egg mixed with 1 cup milk, salt and pepper
1 cup chicken stock
Grease a large ovenproof dish with butter.Preheat the oven to 350ºF/180ºC.
Divide the phyllo dough into two equal parts.Then wrap it in a damp tea towel (this keeps the pastry moist, as it tends to dry out quickly).
Cover the bottom of the dish with one sheet of phyllo dough.Trim the edges and brush with melted butter. Keep repeating this process until half of the pastry is used.
Cook the onions, ground beef and spices in a frying pan.Cook until all of the ingredients are well blended. Spread the cooked meat mixture evenly on top of the phyllo dough pastry.
Cover with the second half of the dough.Spread the remaining melted butter over the top layer. Then, cut into large squares and bake in the oven at 350ºF/180ºC for 10 minutes.
After 10 minutes, spoon the chicken stock and egg glaze over the ruqaq.Then bake until almost dry.
Remove from the oven when baked.Serve immediately.
