15 Minute Shrimp Stir Fry



15-minute prawn stir-fry

Ingredients

  • 2 handfuls of quick-cook brown rice
  • 1 garlic clove
  • 1 tsp grated ginger
  • 3 spring onions
  • 1 pak choi
  • 1 handful of raw king prawns
  • 1 handful of beansprouts
  • 1 splash of soy sauce
  • 1 lemon
  • 1 tsp sesame seeds

Method

  • Put a couple of handfuls of rice in a bowl and boil the kettle. Heat oil in a wok and throw in a crushed garlic clove, grated ginger and the chopped spring onions.
  • Cover the rice with boiling water and microwave for 5min. Meanwhile, tear up a bunch of pak choi and add it to the pan, along with the prawns and beansprouts.
  • Keep stirring until the prawns become pink. Add the soy sauce and lemon juice and serve with the drained rice.
